Apple Pie

300 g / 9 oz/ 1 and an eighth cups of plain flour
150 g / 4.5 oz vegetable margarine
130 ml or about a quarter cup of cold water
100 g / 3 oz / half cup sugar
1 spoon of cinnamon
About 5 medium sized cooking apples (Brambley are good) - peeled and sliced

Preheat oven to 190 C / 380 F degrees. Grease a pie dish (9 inch round or any shape will do). 

For the pastry: rub the margarine into flour until you have a breadcrumb like consistency. Add the cold water and mix to a dough (by hand is best) - add gradually as flours do vary and you may need slightly more or slightly less water than stated.

Divide your dough into 2 (a base and a top). Roll out the base on a floured board or surface and place in the pie dish.

Mix the apple slices with the sugar and cinammon and place on top of base.

Roll out the top and place over the apples. Seal the top and base with water and use a fork to press together.

Cut an X in the centre of the pie and sprinkle with a little sugar.

Bake in oven for about 30 minutes or until pastry is cooked and apple/sugar mixture is bubbling (peek into the X!).

Delicious hot with vegan ice cream or cold on its own.
