Vegan Irish Soda Bread

275g / 10oz / 2.5 cups plain flour
150g / 5oz / 1 cup wholemeal flour
5g / 1 tsp bicarbonate of soda
5g / 1 tsp salt
25g / 1oz / 2 tbsp vegan margarine
2 tbsp cider vinegar
300ml / 0.5 pint / 1.25 cups soya milk

Preheat the oven to 200 degrees Celcius (400 F / Gas mark 6).

In a bowl, mix the cider vinegar and soya milk.

In a separate bowl, mix the flours, bicarbonate of soda, salt and vegan margarine.

Combine both mixtures together to form a dough.

Dust with flour and knead for around 3 minutes. Form into a large ball shape and place on a greased oven tray or round tin.

Cut a cross on the top, dust with flour and bake in the oven for around 45 minutes until brown.

Allow to cool on a wire rack before eating.
