Blueberry Muffins

Muffin ingredients

1 1/2 C or 150g flour
3/4 C or 130g sugar
2 tsp baking powder
1/2 tsp salt
2/3 C vegan milk (soy, rice, almond, or hemp)
1/3 C or 75g oil
1 C or 150g fresh blueberries

Crumb topping

1/2 C or 85g brown sugar
1/3 C or 30g flour
1/4 C or 50g margarine
1 1/2 tsp cinnamon

Preheat oven to 400 degrees F or 200 degrees C. Grease muffin cups or line with muffin liners.

Mix the flour, sugar, baking powder, and salt in a bowl. Combine the oil and plant-based milk in a second bowl; then stir into dry mixture. Fold in blueberries.

Mix all the topping ingredients with a fork. Fill muffin cups right to the top with batter, and sprinkle with crumb topping mixture.

Bake for 20 to 25 minutes, or until done.
