Poached Pears

Makes 4 servings

2 medium ripe pears
2 cups boysenberry-apple juice or similar fruit juice
1/2 teaspoon vanilla extract

Peel pears, then cut them in half lengthwise and remove the cores.

Place pears in a medium saucepan with juice and bring to a slow simmer. Cook, uncovered, for about 10 minutes, or until pears are tender when pierced with a fork.

Transfer pears to 2 small plates or flat dishes.

Increase heat and boil juice, uncovered, until it is reduced to about 1/2 cup. Stir in vanilla, then pour the sauce over pears.

Serve warm or chilled.

These pears make for a simple dessert that is lightly sweetened. Cooking fruit tends to bring out its natural sugars, making them much sweeter than if one were to eat them raw. When buying your pears, be sure to buy them organic whenever possible as conventional pears are treated heavily with pesticides. For added texture, serve these pears with toasted walnuts.
